In a blender add in the rolled oats. Blitz into a flour. Then add in the flour, spinach, egg, milk, cinnamon, baking powder and blitz for 30secs until just combined. Allow the mixture to sit for 5mins to thicken slightly.
Heat a large non-stick fry pan on medium heat. If needed lightly spray with oil and then spoon 1-2Tbsp mixture to form pikelets. Cook on low heat for 1min until bubbles form. Then flip and cook for 1min.
